Cauliflower Fried Rice With Chicken Recipe

Cauliflower fried rice with chicken is a fantastic low carb alternative for traditional fried rice! It’s grain free, gluten-free and dairy free! It has a similar texture to rice or quinoa when fried. Combine it with chicken and a few spices and sauces, BAM…AMAZING! And you won’t believe how EASY it is to make!

This recipe was actually the result of a kitchen accident! I was trying out my new food processor, which I LOVE by the way! like seriously, where has it been all my life?! So I  used the wrong setting leaving me with tiny pieces of cauliflower. BUMMER, I hate wasting food soooo I fried it 🙂 added a little of this and a little of that…and voila! This yummy dish was born. It was a hit! And the hubby loved it!

What You Will Need

Food Processor or blender that can pulse the cauliflower without pureeing it

Cast iron skillet, or a good non-stick frying pan

Metal spatula (for cast iron)

Rubber spatula (for non-stick)

Ingredients for Cauliflower Fried Rice With Chicken

1 head of cauliflower finely chopped (or pre-chopped cauliflower rice)
2-3 chicken breasts
1 Tbsp minced garlic (about 2-3 large cloves)
1/2 onion finely chopped
3-4 large carrots grated
1/2 cup chopped green onion
1 egg
1 Tbsp pure sesame oil
1 Tbsp soy sauce (I use gluten-free)
1 tsp pink himalayan or sea salt
2 Tbsp olive oil for frying

How To Make Cauliflower Fried Rice With Chicken

1. Chop up your cauliflower either with a food processor or with a knife

2. Finely chop your onion and garlic or use a food processor

3. Saute onion and garlic with olive oil on medium-low heat until soft

*You can also use pre-chopped cauliflower rice, Costco carries a big bag! although, the kernels are smaller than I like.

4. Cut chicken into small pieces and add to skillet, cook until the chicken is white through the center and/or lightly browned.

5. Add cauliflower and saute for 5 minutes

6. While this is cooking, prepare your veggies and whisk your egg

7. Add carrots and peas and saute for 5 minutes

8. Add 1 Tbsp soy sauce and 1 Tbsp sesame oil, mix well then add your egg WHILE mixing constantly so egg is well-distributed throughout

9. Last but DEFINITELY not least, add your 1/2 cup of chopped green onion and stir

10. Done! now enjoy your paleo, gluten-free and dairy free fried cauliflower rice with chicken.
