Red Cabbage Salad Recipe

Presenting this simple and delicious red cabbage, cucumber and apple salad! Its fresh, crunchy, sweet and tangy combination of flavors are so perfect!

My sister Alla recently shared this recipe with me! She brought it to a family gathering a few weeks back and it was a hit! Of course I quickly scribbled down the recipe!Hugging_Face_Emoji_2028ce8b-c213-4d45-94aa-21e1a0842b4d_large

I couldn’t wait to share it because its sooo SIMPLE and delicious…

What You Will Need

1. I used my food processor(amazon affiliate link) to chop up EVERYTHING which by the way we LOVE and cant believe we lived without for so long! Of course you can also just make like a ninja and slice and dice everything by hand!

2. Large mixing bowl

INGREDIENTS FOR PURPLE CABBAGE SALAD

1/2 large head of purple (red) cabbage or 1 whole small head
1 english cucumber sliced into quarter slivers
2-3 green apples
1/2 small red onion finely chopped
1/4 cup extra virgin olive oil
1 1/2 tsp salt
1/4 tsp black pepper (more to taste)
3 Tbsp organic unfiltered raw apple cider vinegar (we use Bragg’s brand)

HOW TO MAKE RED CABBAGE SALAD

1. Dice up your ingredients either by hand or in a food processor

2. Combine ALL INGREDIENTS in a bowl including your cabbage, 2 diced apples, diced cucumber, 1/2 red onion and DRESSING: 1 1/2 tsp salt, 1/4 tsp black pepper, 3 Tbsp of apple cider vinegar, 1/4 cup extra virgin olive oil.

3. Mix everything together until it is well combined

4. Let it sit in the refrigerator for 1-2 hours before serving for best flavor

aaaaaaaaaand DONE!!! SO GOOD ahhhh, i’m so making this again as I sit here putting this together:)

Fresh and healthy purple cabbage, cucumber, apple salad! delicious!!!

Ingredients
  • 1/2 large head of purple cabbage or 1 small whole head
  • 1 english cucumber quartered and sliced
  • 2-3 green apples washed and sliced
  • 1/4 cup extra virgin olive oil
  • 1 1/2 tsp salt (we use pink himalayan salt) use 1 tsp to start if using regular table salt and add to taste
  • 1/4 tsp ground black pepper
  • 3 Tbsp apple cider vinegar
